Recipe: Quinoa Side Dish for New Year's Dinner

As you are no doubt planning the final details of your New Year’s Day menu, it is time for Wise Bites to send out a couple of options that just might add a new twist to your menu and kick start your healthy eating for 2013, International Year of Quinoa!

As someone who doesn’t eat turkey, I will be making a Quinoa Cranberry stuffing-like side dish to add to the menu, see recipe below.  However, before I launch into that recipe, I thought I would send along this great link for those of you who do want to use Quinoa Stuffing in a Turkey!  It is a delicious, and very simple-to-make recipe with a 4.5 star rating on, so I trust you will enjoy: 

Vegan Quinoa, Apple/Cranberry Stuffing-Like side dish!


2 cups Canadian Quinoa (see for details on how to purchase)

3 ¼ cups vegetable broth (reserve ¼ cup for the end) 

1 yellow onion, diced 

2 apples, diced

2 cloves garlic, minced 

2 tbsp. olive oil 

1 heaping tbsp. of fresh sage 

1/2 tsp. fresh thyme 

1/2 tsp. salt 

1/4 tsp. black pepper 

½ cup of dried cranberries


Cook 2 cups of Canadian Quinoa pearls with 3 cups of vegetable broth - 10 minutes on a low boil and 6 minutes with the lid off.  Set aside.

Preheat oven to 300 degrees.

In a large skillet, sauté onions and garlic in olive oil, or non-GMO canola oil, until almost soft. Add apples and heat a few more minutes, until onions are clear and apples are just beginning to be soft.

Add thyme, sage, salt and pepper. Toss gently to coat your mixture with the spices.

Add quinoa and dried cranberries. Gently toss to combine well. Add last ¼ cup of vegetable broth to moisten if required.

Transfer to a lightly oiled casserole or baking dish, cover with foil and bake at 300 degrees for 20 minutes. While you are preparing the rest of your meal, this dish will be absorbing all those wonderful flavours.
